To further elaborate, if Mendoza crits with an AP + continuous hit, you would roll: 1 AP save repeatedly until the target dies or passes 1 single non-continuous AP save Continuous does not apply to the bonus save from crits, but AP applies normally.

Correct, you get two saves off of the original hit, but those do not further multiply if they are failed.
So, on-hit effects (two ARM saves, BTS+ARM save, etc) only affect the first save, any after that only apply effects like AP that modify ARM/BTS.
